Kopi Luwak is a rare gourmet coffee produced from the islands of Sumatra, Java and Sulawesi which are part of the Indonesian Archipelago island chain. On these Indonesian islands, there is small marsupial called the Luwak.
This premium gourmet coffee comes from the coffee berries which have been chosen one by one by the Palm Civets or Luwaks. Once the fruits ate eaten and digested by the cat, resulting in shorter peptides and more free amino acids. After passing through the Luwaks’ intestines the beans are defecated, keeping their shape.
After gathering, the beans are thoroughly washed, sun dried and given only a light roast so as to produce a delicious and delicate aromatic coffee with much less bitterness.
